Tom Lawson Takes on The Psalter Hotel in Sheffield: A New Era of Dining and Hospitality

Robin Curtis from SMC Brownill Vickers confirmed that significant interest was shown by prospective tenant’s following marketing the lease opportunity. However, it became clear that Tom was the forerunner to secure the lease due to his experience and vision for the venue.

Tom plans a comprehensive refurbishment of the hotel’s existing 23 bedrooms, transforming the property into a premier destination for dining and accommodation in the heart of Sheffield.

With an extensive background in fine dining and a passion for showcasing the best of local produce, Tom Lawson is set to revitalize The Psalter, infusing it with his unique culinary vision and dedication to exceptional hospitality. The refurbished hotel will feature a full-service kitchen, offering an all-day dining experience that includes brunch, lunch, and dinner, seven days a week.

A Commitment to Sustainability, Affordability, Locality, and Seasonality

Tom Lawson’s approach to the new dining concept at The Psalter is centered on four core principles: sustainability, affordability, locality, and seasonality. The menu will highlight locally sourced ingredients, ensuring that each dish not only supports local farmers and producers but also delivers the freshest flavors to guests.

Sharing and Choice: A New Dining Concept

The concept at The Psalter will be centered around sharing and choice, fostering a sense of community and enjoyment among guests. The menu will feature a selection of dishes designed for sharing, such as Moss Valley bacon chop glazed in Sheffield Honey and scrambled eggs with fresh truffle at breakfast. Guests can look forward to a diverse array of options that cater to various tastes and preferences.

To further enhance the communal atmosphere, The Psalter will introduce “Cosy Hour,” encouraging guests to join us between 3-6pm to enjoy a glass of wine or beer with free nibbles. Additionally, children can delight in half-price Bullion hot chocolate, topped with whipped cream and marshmallows, making it a perfect treat for families.

At dinner, The Psalter’s menu continues the theme of sharing with a vast array of vegetarian and vegan dishes, such as Yorkshire asparagus with cured egg yolk and blood orange. These can be paired with some of the UK’s finest meat, fish, and shellfish, like Cornish mussels “A La Molly” cooked in Our Cow Molly Cream and wild garlic. To finish, indulge in a sticky apple cake made with apples from Tom’s garden, a delightful conclusion to a memorable meal.
